2016: Day 19 Oregon & Meals

We departed Mt. Shasta, California at 6:45 a.m.  It's another long day of driving North through California to Oregon and Washington. Jason is super happy to check Oregon off his list of states visited. He has now been to ALL lower 48 states. Yahoo=bucket list. 

When we left home in July, I had our freezer on the motorhome stocked full of already made or easy to make dinners. For example:

Grilled chicken breast w/grilled corn, potatoes, onions & peppers
Italian sausage & baked beans
 hamburgers/cheeseburgers w/Asian slaw
veggie burgers for mama 
homemade 3 bean chili 
turkey quinoa tacos
Chicken tacos w/rice & beans
Slow cooked pork roast w/steam able green beans & baked beans
spaghetti w/meatballs & salad
 mushroom ravioli w/pinenuts & asparagus, salad
Sautéed shrimp w/couscous & steamable broccoli
Slow cooked Indian butter chicken thighs with rice & veggie
Turkey & ham sandwiches

Charlie made his own sausage & egg omlet for breakfast. Most days when the kids and I went to the pool or beach, they had a PB& J or ham sandwich while I ate a salad every day. I crave veggies & feel like I have definitely not eaten my daily dose. 
We have gone out to local restaurants in Buellton for Mexican two times, Chinese, Italian, In & Out burger, Wine tasting & tapas meal. 

 
Sunday night we stayed at Coyote Run RV park, drove 500 miles from plush Northern Cali to prairie Oregon. We literally only got out at Coyote to take the trash out. It was not very nice but located right off the highway and literally the only place for miles!
